Black Beans and Mango Salad
  • 1 can (15 ounces) black beans, rinsed and drained
  • 2 cups mango, diced
  • 1 cup sweet red bell pepper, diced
  • 6 green onions, thinly sliced
  • 1/4 cup cilantro leaves, chopped
  • 1/4 cup fresh lime juice
  • 1 tbsp olive oil
  • 1 seeded Jalapeno pepper, minced
  • Salt to taste

Combine ingredients in a bowl. Toss and serve.
